The Amaranth 'Elephant Head' (- Amaranthus gangeticus.): Zone 2-10 This plant has many varieties of Amaranth. I happen to like the elephant head because it is so unique. This is a self sowing plant that comes back year after year if you leave some seeds behind. It is a grain. You can leave the heads to dry on the plant and give it to your chickens as food. One head will feed 20 chickens for a few days. You can harvest the grain for yourself as well. You put it on a blanket or pound it in a pillow case. Then you just have to winnow the grain to remove the chaff. The leaves can be eaten as well but it is more used for animal feed.
