Featured Plant: Groundnut (Apios americana)

This week's featured Plant is the Groundnut (Apios americana) zone 3-10. The groundnut (sometimes called the native potato) is a perennial native plant. The vines can be encouraged to grow up and over things. The tubor can be eaten like a potato but is said to have more vitamins than a potato. In warmer climates it can go to seed and those seeds are said to be like a pea pod. A funny story. When researching edible perennials I came across this plant and searched high and low for it. I finally found it and once I planted it I discovered I actually have an entire field of it and just didn't know it.
