The Skirret plants (Sium sisarum). This is a perennial carrot (zone 3-9 but some places claim they only go to zone 5, my skirrets have survived -45 so I'm claiming it might even be zone 2). The plant grows white long skinny carrots that taste exactly like carrots.. They grow outward like an octopus so you harvest from the outside leaving the inside alone. They do not spread but are LOVED by gophers, mice, voles and so on. Because of this I highly recommend putting them in a raised bed and lining the bottom in chicken wire. You will not be able to harvest the bigger roots that go through the wire but neither will with gophers. You will not find this in the wild, but there is a toxic plant that looks like it in the wild. Only harvest garden plants. Let me know if you have any questions.
